Associate Manager BOH Catering

Position Summary:

The Associate Manager, Architectural BOH & Catering serves as a bridge between is direct reports and senior manager, often overseeing a small team or specific projects while assisting the manager in daily operations. He also provides a leadership role and expertise to a newbuilding site office, leading all aspects of the detailed design phases, design coordination, and building phases of the projects assigned to one site office.  In so doing, the incumbent manages the catering & BOH activities in tight collaboration with the shipyards’ related management, as well as designers and architect professionals in order to build and deliver high quality brand specific ship design concepts, on time and on budget.  Also serves as a steady conduit of information and intelligence to the primary site office team and with key designers. 


Technical Duties:

  1. Leads, tracks, and upholds the Back-of-House (BOH) and catering building processes on site, delivering brand specific vessel BOH and catering designs in accordance with both design intent concepts and/or operational input given and shipyard contracts
  2. Responsible for all catering and back-of-house areas such as crew cabins, crew public areas, ship’s offices, lockers, galleys/pantries/provisioning, laundry, workshops, etc for all projects across site offices.  Not responsible for technical areas such as machinery, casings, HVAC rooms, etc.
  3. Independently liases, collaborates and coordinates with operations, designers, catering experts, and shipyard throughout all phases of the project, providing proactive input and communication in effort to fulfill expectations.
  4. Controls and coordinates eventual modifications within these areas with designers and architects.  Prepares the Modification requests for changes in areas and coordinates these with Project Director, informing team.
  5. Organizes planning and leadership of various architect, designer, catering equipment coordination meetings, visits, and inspections, in tight synchronization with delivering to shipyard milestones.   
  6. Support is team to conduct design intent drawing reviews, detail drawing reviews, factory visits, mockup reviews, and inspections
  7. Leads mock-up FATs, and first of production inspection of crew cabins, galleys, and other related areas.
  8. Initiates troubleshooting particular USPH issues and is owner’s frontline USPH representative for all areas.
  9. Tracks and reports on detailed design & design building/production progress, focusing on time schedules, critical path milestones, costs, completion of inspections, quantity/closure of remarks, and while keeping strong focus on quality, in accordance to contract and/or in accordance with subsequent approved modifications, communicating the same in a simple and clear manner.  Reports same to Project Manager, and Newbuild Architectural Design Dept on regular basis.
  10. Leads a healthy inspection process in collaboration with operations, catering consultants, and designers as needed.  Evaluates the quality and suitability of building work, ensuring that design goals & design standards, guidelines are met, projects are on budget, and ship readiness is on time.  All remarks are followed up.
  11. Independently, personally leads, and/or assigns and oversees inspection teams for related areas such as provision rooms, galleys, pantries, bars, etc , in conjunction with input from F&B Manager, and Chief Housekeeper (crew cabins, crew corridors and areas).
  12. Owns cost management of cost complexity in all catering and back-of-house areas.  Keeps Project Director and Manager regularly informed.
  13. Maintains good relations with shipyard management in related area, along with shipyard’s area coordinators and turn-key contractors.
  14. Assists owner supply coordinators with coordination of delivery of Hotel supplies.  Oversees installation schedule of slot technicians.
  15. Supports guarantee claims for related areas.
  16. Imparts knowledge and experience across superintendent levels within the site office.
  17. May be called upon occasionally for design related pre-contract negotiations for research & development projects.  Prepares specification (outline and detail) for projects and updates specifications based on discussions with internal departments.  May be similarly called upon to collaborate with others in new white paper prototype projects, bringing ideas, experience and guidance.
  18. Additional responsibilities may be assigned based on the scope of the project

 

Management Duties

  1. Assisting the manager to organize the team and in setting goals and objectives for the team.
  2. Helping to develop and implement policies and procedures to improve efficiency.
  3. Managing, mentoring, and developing junior or new team members.
  4. Assisting with the hiring and onboarding of new employees.
  5. Assisting with the implementation of new projects, programs, or initiatives.
  6. Providing training and development opportunities for team members.
  7. Collaborating with other site offices to ensure coordination and alignment of efforts.

 


Financial Responsibilities

Management of catering packages for several projects in range of $10m or more, plus sister simultaneously.  Manages cost complexity value in related areas.


Qualifications:

  1. Minimum 12 years with the cruise ship industry, combined with on-site construction, with familiarity of strong shipbuilding processes, site surveys and marine standards. 
  2. Proven knowledge of ILO, IMNO, DNVGL, and USPH
  3. Bachelor’s degree or equivalent required. Hospitality, culinary, architectural and/or naval architecture degrees preferred.
  4. At least 3 years of team management experience.

  1. Ability to inspire and guide a team, provide direction and coaching, and make effective decisions.
  2. The ability to build strong relationships with team members of all department of the organization and understand the needs and concerns of all parties.
  3. Ability to prioritize tasks, manage time effectively and meet deadlines.
  4. Strong management skills, including planning, organizing, and directing people and resources to achieve goals.
  5. Strong skills to read detailed design and technical drawings
  6. Excellent written & verbal English is a must.  German, French, and/or Finnish language is an advantage.
  7. Strong interpersonal skills with strong ability to effectively communicate with all levels of management thru employees, across diverse cultures around the world.
  8. Requires a high level of written and verbal communication skills to convey concepts and requirements of the team to technical and non-technical individuals.   Is effective at simplifying complexity.
  9. Requires strong teamwork, cooperation, and collaborative skills to develop rapport within the department, with other departments, and externally.
  10. Good ability to proactively identify problems and reviewing related information to develop and evaluate options and implement solutions.
  11. Possesses logic and reasoning to identify the strengths and weaknesses of alternative solutions, conclusions or approaches to problems.
  12. Ability to work under tight schedules and to endure challenging situations in high stress situations.
  13. Working knowledge of computer software for communication and presentations. 

 


Physical Demands:

Good physical condition, able to endure extensive walking and stairclimbing within a heavy and loud shipbuilding construction environment.

Be able to travel often, abroad if require for projects
