The Royal Caribbean Group’s Celebrity Cruises brand has an exciting career opportunity for a full time Lead, Restaurant Operations on the Hotel Operations Team reporting to the Sr. Director, Food and Beverage Operations.

 

This position will work on-site in Miami, Florida

 

Position Summary:

 

This position has the management and developmental responsibility for the Celebrity Cruises Restaurant operations shipboard and shoreside. This position will be directly responsible to manage a wide range of projects in support of the Restaurant operations. 

 

This lead will focus on day-to-day operations, supporting Restaurant Team with Elevating Celebrity Way, Safety and Injury prevention, new CSD strategy, new restaurant concepts, maximizing specialty restaurants revenue streams, Restaurant initiatives, launch of Xdining for Celebrity Fleet, Groups and Charters-restaurant coordination, shoreside and shipboard operation, Private destinations, policy and procedures changes including SOPs (SOE’s), gatekeeper for all results-orientated data Restaurant Rating and Revenue, implementation of  restaurant projects    

 

Essential Duties and Responsibilities:

 

  • Serves as the functional member of the company’s restaurant operations, including leading the Training section of Restaurant team members and providing guidance and support to shipboard Restaurant Teams.

 

  • Monitors the overall effectiveness of the shoreside dining administration process, and financial discipline. Reporting all to Senior Manager Restaurant operation.  Takes corrective action as required to ensure continuous improvement in departmental performance. 

 

  • Recommends, help develop and implement policy and procedures to ensure consistency and continuous improvement in the company’s restaurant operations.  Ensures the effective implementation and documentation of all policies and procedures through the company’s proprietary systems. 

 

  • Develops and implements managerial and crew training. Monitors program execution and takes corrective action as required. 

 

  • Conducts ongoing quality assurance activities, ensuring that all restaurant operations are being conducted in accordance with the company’s product, service, sanitation (USPH) and related standards.

 

  • Monitors fleet equipment par levels and standards and takes corrective action as required. 

 

  • Establishes cross functional work teams to ensure the proper development and execution of all project plans. 

 

  • Provides on-going support in fleetwide efforts to remain above and beyond compliance with all company and external standards, particularly related to Workplace Safety, Fuel Conservation, Environmental practices, ISM/ISO Code and the U.S.P.H. vessel sanitation program.

 

Qualifications, Knowledge and Skills:

 

  • Have minimum 6 years of experience in F&B
  • Must be able to perform each essential duty in a timely and accurate manner
  • Should be a self-starter and be able to fulfill responsibilities with little direction
  • Strong written and verbal communication skills and ability to work in a global environment
  • Ability to work in a fast-paced environment while managing multiple responsibilities at once
  • Willingness to accept the immediate product and project responsibility
  • Ability to operate in a team environment
  • Be able to make recommendations, suggestions to improve restaurant operations
  • Possess the skills on Excel, PowerPoint, any Graphic design program at a basic level
  • Demonstrate a friendly personality, strong knowledge of restaurant operations and overall F&B, and good interpersonal skills
  • Have experience training or are willing to train and design training programs for restaurant
  • Able to travel up to 30% of the time
  • Able to understand the needs of each restaurant according to concept

 

Preferred Qualifications:

 

  • Experience and/or training in the hospitality field is considered a plus
  • Cruise industry experience is a plus
